Look Ma! No Training wheels!

Corinne has been working towards riding her bike without training wheels. After several weeks of her riding with just one training wheel, I thought that we needed to remove the other and let her crash and burn a few times. She was relying too much on the one wheel. We removed the wheel and she got the hang of it pretty quick. We just needed to build the confidence!

By the 2nd evening she had it down.

...and I have a new recipe for y'all!
I haven't cooked in a long "cook" I mean actually take time to prepare a meal. We have had a lot of quick and easy meals lately. Last night I was in the mood to have something good, so I worked out inventing a new recipe. There is nothing new about fish tacos, but here is the version I came up with!
Fish Tacos

1 1/2 lbs white fish...I used tilapia
1/4 head of red cabbage sliced thin
1/4 red onion, minced
1 tomato, chopped
3/4 cup mayo
1 heaping Tablespoon of dill pickle relish
1 Lime (or more for serving)
1 Lemon
Salt and Pepper
white corn tortillas

Season the cabbage, onion, and tomato with salt and pepper. Squeeze a bit of lime juice over the top. Set aside

Mix together the mayo, pickle relish, and the juice of one lime. Set to meld in the fridge.

Sprinkle the fish with Salt pepper, and juice from the lemon. Grill for 10(ish??) minutes or until the fish is cooked through. Then slice into strips.
(the fish would be good fried too)

Warm the tortillas, then to serve-- slap on with a few pieces of fish, the cabbage mixture, and drizzle generously with the sauce.
